Make your own Siopao

There are many Chinese food that have long been fused with our own local taste. But there are few which persist to be, yes, purely Chinese. One prime example is siopao. Siopao is essentially a steamed dumpling or steamed pork bun filled with barbecued pork and a slew of spices, herbs and sauces.

Ingredients:

200g Sugar

Group I
2g Salt
450g Water
600g General Siopao Flour

Group II
10g Baker's Choice Baking Powder
10g Baker's Choice Compressed Yeast
120g Shortening

Procedure:

1. Dissolve sugar and salt in water.
2. Combine ingredients of group II to the sugar and salt solution. Mix for 2 minutes at low speed then at medium speed until dough is well developed.
3. Scale and put the desired filling.
4. Proof for and hour and steam.

Total Dough weight : 1,787 grams
Dough weight /pc : 60 grams
Yield: 29 - 30 pieces

** Bakers Choice Compressed Yeast can be substituted with Bakers Choice Instant Yeast by decreasing to 0.5%.
