Bakers Choice Pandesal

Probably the country's most popular baked item on every household's table, pandesal has the unique characteristics not found in other breads that serve its purpose - satisfy every Filipino's hunger pang in early morning. Usually dunked in a cup of hot coffee or hot chocolate or made into a sandwich, pandesal proves itself as the unchallenged bread of choice for everyone.

Ingredients :
Group I
30g Salt
700-800g Water
180g Sugar

Group II
1,200 g General/Bakers Choice (1st classs) Bread Flour
800g Islands/Isla Soft Flour
40g Bakers Choice Compressed Yeast**
200g Oil

Toppings:
Group III
200g Bread Crumbs

Procedure
1. Dissolve sugar and salt in water.
2. Combine ingredients of group II to the sugar and salt solution. Mix for 2 minutes at low speed then at medium speed until dough is well developed.
3. Allow dough to rest for 1 hour.
4. Scale and mould, add toppings.
5. Proof and bake at 150 ºC


Total Dough weight : 3,244 grams
Dough weight /pc : 50 g (sml) / 250 g (big)
Yield : 64 pcs (sml) / 13 pcs (big)

** Bakers Choice Compressed Yeast can be substituted with Bakers Choice Instant Yeast by decreasing to 1.0%.
